Ingredients

  • 2 eggs
  • 2 cups unsweetened applesauce
  • 2 cups cut up apple pieces
  • 2 cup shredded carrots
  • 1 cup old fashioned oats
  • 2 cups shredded zucchini
  • 3 tablespoons vanilla
  • 2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ginger
  • 1 teaspoon salt
  • 3 teaspoon cinnamon
  • 1/2 teaspoon all spice
  • 1 cup skim milk
  • 1/2 cup Truvia brown sugar blend
  • 4-6 cups whole wheat flour

Directions

  • Remove excess water by squeezing the shredded zucchini, then patting it with a paper towel
  • Beat together applesauce, sugar substitute, eggs and vanilla
  • Mix apple pieces, zucchini, carrots and oats
  • Sift together flour, baking soda, baking powder and spices
  • Alternate flour and milk to the applesauce mixture
  • Once all the milk and all the flour has been added, add the apple pieces, zucchini and carrot mixture
  • Stir to combine
  • Bake at 350 for 20-60 minutes or until done and golden brown
