Banana Oatmeal Muffins

Ingredients

  • 1 cup mashed bananas (approx. 2 small)
  • 1/2 cup non-fat plain yogurt
  • 1/4 cup egg substitute or 2 egg whites
  • 1/4 cup unsweetened applesauce
  • 1/4 cup granulated sugar
  • 1 cup flour (1/2 white and 1/2 whole wheat)
  • 1/2 cup old fashioned oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Directions

  • Preheat oven to 350 degrees.
  • Spray muffin tins with cooking spray or use baking cups.
  • Combine bananas, yogurt, egg, applesauce, and sugar.
  • In a separate bowl, mix flour, oatmeal, baking powder, baking soda, and salt.
  • Slowly add the flour mixture to the banana mixture.
  • Add mixture to the muffin tins (about 2/3 full).
  • Bake for 20 minutes or until a toothpick comes clean when stuck in the center.
