Ingredients

  • 1 cup mashed bananas (about 2 small)
  • ½ cup plain non-fat yogurt
  • ¼ cup egg substitute or 2 egg whites
  • ¼ cup applesauce (unsweetened)
  • ¼ cup granulated sugar
  • 1 cup flour (1/2 white and ½ whole wheat)
  • ½ cup old fashioned oatmeal
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Directions

  • Combine mashed bananas, yogurt, egg, applesauce and sugar.
  • Combine flour, oatmeal, baking powder, baking soda, and salt in a separate bowl.
  • Slowly add the flour mixture to the banana mixture.
  • Add into aluminum-lined muffin tins (about 2/3 full).
  • Bake in a preheated oven at 350 degrees for 20 minutes or until a toothpick comes clean when stuck in the center.
