• 6 ripe bananas mashed
  • 1 cup applesauce
  • 1/4 cup brown sugar (to further reduce sugar may use 2 Tablespoons Truvia Brown Sugar Blend)
  • 5 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 2 cup shredded zucchini
  • Fat free spray-1 spray per pan
  • Parchment paper


  • Preheat oven to 350 degrees
  • Combine bananas applesauce and sugar
  • In another bowl, mix baking powder with flour and slowly add to fruit mixture
  • Fold in zucchini
  • Lightly spray 2 9-inch by 5-inch loaf pans
  • Place a sheet of parchment paper in each pan so it comes up over the long edges
  • Divide batter between the two pans
  • Bake at 350 degrees for 1 hour
  • Lift out of pan with parchment paper
  • May make into muffins and bake for 18-20 minutes
