Ingredients

  • 1 cup skim milk
  • 1 tsp vanilla
  • 2 mashed, ripened bananas
  • 2 cups applesauce
  • 2 egg whites
  • 3 ½ cups flour
  • 2 tsp baking powder
  • 2 ½ tsp baking soda
  • ½ tsp salt
  • 10 oz fresh or frozen blueberries
  • Lemon Glaze: 2 tbs lemon juice
  • Lemon Glaze: 1 tbs water
  • Lemon Glaze: 2 cups powdered sugar

Directions

  • Preheat oven to 350 degrees
  • In a small bowl, combine milk and vanilla
  • Combine bananas, applesauce, and egg whites in a separate bowl
  • Mix all dry ingredients together (flour, baking powder, baking soda, salt)
  • Add banana mixture to dry ingredients
  • Slowly add milk mixture to the banana and dry combination and stir until combined
  • Lightly coat a cake pan with non-stick spray, pour batter into pan and bake for 40-50 minutes
  • Lemon Glaze: Wisk the lemon juice and water and add sugar a 1/2 cup at a time until a glaze is formed
  • Pour over the blueberry cake when cooled

Considerations

To reduce the amount of sugar, cut the lemon glaze recipe in half.
