Ingredients

  • 1/3 cup lower sodium soy sauce
  • 3 tablespoons lime juice (juice from 2-3 fresh limes)
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon MCT (Medium Chain Triglyceride) oil

Directions

  • Whisk together soy sauce, lime juice, rice vinegar and ginger
  • Slowly add MCT oil and whisk together
  • Add to cucumber salad before serving (see our cucumber salad recipe), or serve with your favorite salad or vegetables.

Considerations

CAUTION: If you have not used MCT oil before, check with your healthcare provider to see if it is right for you. Your physician or dietitian will have recommendations about how to purchase a pharmaceutical grade of MCT oil as well how to safely use it, beginning very gradually and increasing slowly as tolerated. Do not confuse MCT oil with coconut oil, which contains both long chain fats (individuals with FCS unable to break down) and medium chain fats.
