• 1 can (15 ounces) black beans, drained and rinsed
  • ½ teaspoon canola oil
  • ½ cup green pepper, diced
  • ¼ cup red onion, diced
  • ½ cup low sodium vegetable broth
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • ¼ teaspoon black pepper
  • ½ cup whole wheat bread crumbs
  • 2 egg whites
  • nonstick cooking spray


  • Preheat oven to 375 degrees
  • Mash black beans in bowl with a potato masher
  • Heat canola oil in large skillet or wok and sauté green pepper and onion
  • Add mashed beans and broth to skillet and bring to simmer, then cool
  • Mix in bread crumbs and egg whites to bean mixture
  • Line cookie sheet with aluminum foil and spray with nonstick cooking spray
  • Form mixture into 4 patties on cookie sheet
  • Bake for 25 minutes, turning over halfway through cooking time.
