Ingredients

  • 3 large potatoes (1.5 – 2 pounds), peeled and quartered
  • ½ cup skim milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon black pepper
    1 pound extra lean 99% fat free ground turkey or ground chicken
  • 2 – 14 oz cans low sodium black beans, drained and mashed
  • ½ cup low sodium chicken broth
  • 14 oz can cream corn
  • 14 oz can (no salt added) corn, drained

Directions

  • Preheat oven to 375 degrees
  • Boil potatoes until soft
  • Drain and mash potatoes adding milk, garlic powder, onion powder, and pepper
  • Cook ground turkey until done
  • Add mashed beans and chicken broth to ground turkey and bring to a simmer
  • Spoon meat and bean mixture into the bottom of a 13×9 pan
  • Pour both cans of corn on top of meat mixture
  • Finish off with mashed potatoes
  • Bake approximately 25 minutes or until top is crispy and slightly bubbling
