Ingredients

  • Nonstick spray
  • ½ red onion, chopped
  • 2 cups carrots, chopped
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 teaspoon black pepper
  • 3 teaspoons salt
  • 1 cup shredded cabbage
  • 8 cups water
  • 4 cups broth
  • 3 cups kale
  • 1 ½ cups cubed squash
  • 1 cup rice

Directions

  • Lightly spray the non-stick spray in a large stock pot
  • Add the onion, carrots, and the spices
  • Sauté, stirring constantly until the onions are softened and lightly browned
  • Add sautéed items and the rest of the ingredients to a crockpot
  • Cook on high for 4 hours, or low for 8 hours.
