Whole Wheat Pasta with Mackerel & Olives

Whole Wheat Pasta with Mackerel & Olives

Ingredients

  • 1 2/3 cup of whole grain durum wheat pasta
  • 1 garlic clove
  • Pinch of chili pepper, to taste
  • 1/3 cup of parsley, chopped
  • 1/2 cup of fresh tomatoes, chopped
  • 1/2 cup of canned mackerel (or sardines, tuna, or salmon)
  • 1/3 cup pitted black olives
  • Dash of olive oil and salt, to taste

Directions

  • Cook whole grain durum wheat pasta per package instructions. Save 1/2 cup of pasta water before draining.
  • Sauté garlic with dash olive oil and salt, to taste and a pinch of chili pepper, to taste. Add chopped parsley, and fresh tomatoes, chopped and simmer for 10 minutes.
  • Add canned mackerel (or sardines, tuna, or salmon) and cook 5 minutes. Stir in pitted black olives.
  • Add pasta water and mix all ingredients well before serving.
