Smashed Potatoes

Ingredients

  • 8 cups diced potatoes
  • 1 cup fat-free milk
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 3 tsp parsley
  • 1 tsp salt

Directions

  • Dice potatoes into equal sized pieces, about 1 inch cubes.
  • Put potatoes in a large pot and add enough water to cover potatoes.
  • Bring water to a boil.
  • After bringing water to a boil, adjust heat to keep at a simmer for about 20 minutes or until easily pierced by a fork.
  • Strain and smash potatoes with a fork or potato masher.
  • Add fat-free milk and mash again.
  • Add spices to potato mixture and mash/stir until spices are blended evenly throughout.
