Kale and Rice Soup

Ingredients

  • Nonstick spray
  • 1/2 chopped red onion
  • 2 cups chopped carrots
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp black pepper
  • 3 tsp salt
  • 1 cup shredded cabbage
  • 8 cups water
  • 4 cups broth
  • 3 cups kale
  • 1 1/2 cups cubed squash
  • 1 cup rice

Directions

  • Lightly spray the non-stick spray in a large stock pot.
  • Add the onion, carrots, and the spices.
  • Sauté, stirring constantly until the onions are softened and lightly browned.
  • Add sautéed items and the rest of the ingredients to a crockpot.
  • Cook on high for 4 hours, or low for 8 hours.
