Broccoli Salad

Ingredients

  • 1/4 cup plain fat free Greek yogurt
  • 1/2 cup apple cider vinegar
  • Stevia® based sugar substitute to equal 1/4 cup sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 small diced red onion
  • 2-3 broccoli crowns cut into bite sized pieces (about 6-8 cups)
  • 1 1/2 fat free shredded mozzarella cheese
  • Salt and pepper to taste

Directions

  • In a medium bowl, combine the yogurt with the vinegar, sugar substitute, garlic powder, onion powder, salt and pepper to make the dressing
  • In a separate medium bowl, mix the broccoli, cheese and onion
  • Toss the dressing with the broccoli, cheese and onion mixture and enjoy!
