Cucumber Salad

Ingredients

  • 2 whole tomatoes, diced (or halved grape tomatoes)
  • 1/2 diced red onion
  • 3 medium diced cucumbers
  • 1/4 cup light soy sauce (eliminate this – no need with soy ginger dressing)
  • 1 cup soy ginger dressing (see soy ginger dressing recipe)

Directions

  • Combine the diced tomatoes (or halved grape tomatoes), diced red onion and combine with the diced cucumbers.
  • Add the soy ginger dressing.
