Steamed Squash

Ingredients

  • 1.2 medium diced onion
  • 3 cloves minced garlic
  • 2 small diced zucchini squash (about 2 1/2 cups)
  • 1/2 tsp salt
  • Fresh ground pepper (to taste)

Directions

  • Lightly spray pan with cooking spray (2 seconds).
  • Cook diced onion and garlic until lightly browned.
  • Place steamer in a medium pot with water just touching bottom of and bring to a boil. Once water is boiling, add squash and steam until squash is fork tender.
  • Remove from steamer and drain water.
  • Place squash back into pan and add onions and garlic.
  • Add salt and pepper to taste and mix well.
