Blueberry Coffee Cake

Ingredients

  • 1 cup skim milk
  • 1 tsp vanilla
  • 2 mashed, ripened bananas
  • 2 cups applesauce
  • 2 egg whites
  • 3 1/2 cups flour
  • 2 tsp baking powder
  • 2 1/2 tsp baking soda
  • 1/2; tsp salt
  • 10 oz fresh or frozen blueberries
  • Lemon Glaze: 2 tbsp lemon juice
  • Lemon Glaze: 1 tbsp water
  • Lemon Glaze: 2 cups powdered sugar

Directions

  • Preheat oven to 350 degrees.
  • In a small bowl, combine milk and vanilla
  • In a separate bowl, combine bananas, applesauce, and egg whites.
  • Mix all dry ingredients together (flour, baking powder, baking soda, salt).
  • Add banana mixture to dry ingredients.
  • Slowly add milk mixture to the banana and dry combination and stir until combined.
  • Lightly coat a cake pan with non-stick spray, pour batter into pan and bake for 40-50 minutes.
  • Lemon Glaze: Whisk the lemon juice and water and add sugar a 1/2 cup at a time until a glaze is formed.
  • Pour over the blueberry cake when cooled.

Considerations

To reduce the amount of sugar, cut the lemon glaze recipe in half.

Consider replacing some of the flour with equal amounts of whole-wheat flour to increase the amount of fiber and vitamins.
