Bean Burgers

Ingredients

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 teaspoon canola oil
  • 1/2 cup green pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup low sodium vegetable broth
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/2 cup whole wheat bread crumbs
  • 2 egg whites
  • Nonstick cooking spray

Directions

  • Preheat oven to 375 degrees.
  • Mash black beans in bowl with a potato masher.
  • Heat canola oil in large skillet or wok and sauté green peppers and onion.
  • Add mashed beans and broth to skillet and bring to simmer, then cool.
  • Mix in bread crumbs and egg whites to bean mixture.
  • Line cookie sheet with aluminum foil and spray with nonstick cooking spray.
  • Form mixture into 4 patties on cookie sheet.
  • Bake for 25 minutes, turning over halfway through cooking time.
